Wheat-free bakes: Oat and cashew nut cookies

A tasty easy-to-make bake.

• 175ml (110g) rolled oats
• 80ml (60g) white rice flour
• 25ml raisins
• 50g cashew nuts, chopped
• 5ml xanthan gum
• 125ml (110g) brown sugar
• 110ml (110g) butter
• 15ml golden syrup
• 1 large egg, lightly beaten

1 Mix the oats, flour, raisins, nuts, gum and 1ml salt in a large bowl.

2 Heat the sugar, butter and syrup together in a saucepan. Pour this mixture over the dry ingredients and mix. Stir in the egg.

3 Spoon teaspoonfuls of the mixture onto two greased and lined baking trays. Bake in a preheated oven for 12 to 15 minutes.

4 Leave to cool on the baking tray for five minutes, then cool completely on a cooling rack. Store in an airtight container.
