They’re quick, they’re easy and most of the ingredients are already in your store cupboard. We take the pain out of weeknight cooking.

• 4 whole baby hake, cleaned and scaled
• 15ml oil
• steamed vegetables and lemon wedges, to serve
• 100ml canola oil
• 10ml fish sauce (or 3ml salt)
• 40ml lemon or lime juice
• 20ml brown sugar
• 1/4 Chinese cabbage, shredded
• 3-4 carrots, peeled and julienned
1 Heat 15ml oil in a large frying pan over high heat. Add the fish and fry for one to two minutes per side, to brown.
2 Mix together the dressing ingredients. Pour half over the cabbage and carrots, toss and refrigerate until ready to serve.
3 Brush the remaining dressing over the fish. Lower the heat and continue to cook the fish, brushing it often with the dressing, until done. Serve the fish warm together with the coleslaw, the steamed vegetables and some lemon wedges.
