You will need
• 125ml (115g) butter
• 15ml golden syrup
• 30ml milk
• 750ml (655g) castor sugar
• 1 can condensed milk
• 5ml vanilla essence
• pinch of cream of tartar








I’ve never been able to find caster sugar where I live but have discovered how to make it easily: just put regular granulated sugar in a food processor or use a stick blender until the sugar is a super-fine consistency.
