A recipe a day. Week 4: Saturday
Serves: 4
Preparation time: 20 minutes, plus marinating time
Cooking time: 6-10 minutes
• 4 x 200g sirloin or rib-eye steaks
• chips or potato wedges, to serve
Marinade
• 100ml balsamic vinegar
• 90ml olive oil
• 4 cloves garlic, crushed
• 1 onion, sliced
Rub
• 30ml each freshly chopped thyme and origanum
• 5ml coarse salt
• 5ml ground black pepper
• 3ml mustard powder
• 15ml paprika
• 5ml fennel seeds
• 5ml cayenne pepper
1 Whisk the vinegar, oil and garlic together. Add the onion and the steaks and marinate for one to two hours, or overnight.
2 Remove the steaks and pat dry. Mix the rub ingredients together and rub over the steaks. Set aside for an hour, then cook over medium to hot coals on the braai or in a griddle pan. Seal both sides over the heat, then brush with the reserved marinade. Cook for three to five minutes per side. Serve with chips or wedges.
