Sloppy Joe potatoes (wheat-free)

A recipe a day. Week 4: Friday

• olive oil
• 500g lean beef mince
• 1 large onion, finely chopped
• 1 green pepper, seeded and diced
• 1 can tomato purée
• 15ml Dijon mustard
• 15ml Worcestershire sauce
• 4 large baked potatoes
• salad, to serve

1 Heat a layer of oil. Add the mince and cook, stirring over a high heat until the mince has browned. Add the remaining ingredients, except the potatoes. Bring to the boil. Reduce the heat and simmer for 15 to 20 minutes. Season to taste.

2 Cut a cross into the top of each potato. Press to open slightly. Spoon some mince into each potato. Serve with a salad.

GOOD IDEA This versatile savoury mince can also be served with mashed potato, pasta or fresh rolls. Make a double batch and freeze half to use at a later date.
