Potato cake with salmon and egg

A recipe a day: Wednesday

• 4 large potatoes, peeled and grated
• 5 large eggs
• 4 spring onions, sliced
• 10ml cake flour
• 100ml creamed cottage cheese
• sunflower oil
• 100-200g smoked salmon trout (or use ham or salami)
• sliced lemon, to serve
• fresh rocket, to garnish

1 Squeeze any excess liquid from the grated potato then put the potato into a large bowl. Whisk one egg and stir into the potato. Add the spring onions, flour and 30ml cottage cheese. Season to taste.

2 Heat a thin layer of oil in a large frying pan. Spoon the mixture into the pan. Cook over a medium to low heat until crisp, then hold a large plate over the pan and invert to turn the potato cake over. Fry the other side.

3 Fry the remaining eggs. Cut the potato cake into wedges. Serve topped with an egg, smoked salmon trout and a dollop of the reserved cottage cheese, with a lemon slice alongside. Garnish with rocket.
