• 3 large eggs
• 135g (250ml) cake flour
• 750ml milk
• 2-3 sticks cinnamon
• spiced sugar, to serve (see recipe below)
1 Beat the eggs and 2,5ml salt together with a fork. Add the cake flour and mix well. Add enough cold water to make a stiff dough.
2 Knead the dough until it is smooth and elastic. Roll it out onto a lightly floured surface until it is about 6mm thick. Cut into thin strips with a sharp knife.
3 Bring the milk to the boil. Add the sticks of cinnamon. Add the pieces of dough and simmer for 20 to 30 minutes until cooked through. Serve topped with spiced sugar.
Spiced sugar Mix 125ml sugar with 5ml ground cinnamon, 3ml ground allspice and 1ml ground cardamom. Use brown sugar as a variation.
