If you, or a friend or family member, are unable to eat gluten, these tasty cheese straws are just what you need.

Preparation time: 15 minutes
Baking time: 10-12 minutes
Oven temperature: 190°C
• 60g cold butter, cubed
• 80ml cornflour
• 80ml potato flour
• 60ml rice flour
• 2ml xanthan gum
• 0,5-1ml cayenne pepper
• 75g mature Cheddar cheese, finely grated
• 50ml cream
1 Rub the butter and flours together until the mixture resembles bread- crumbs. Stir in the xanthan gum, the pepper and the grated cheese until everything is evenly mixed.
2 Add the cream and gently press the mixture together until it forms a soft dough.
3 Roll out the dough into a rectangle of about 20 x 10cm on a piece of clingfilm. Cut 20 strips 1cm wide and carefully place on a lined baking sheet. Bake for 10 to 12 minutes or until the cheese straws are golden and crisp. Leave to cool completely before packaging in a pretty jar. The cheese straws are rather fragile, so handle carefully.
