Preperation time: 20 minutes
Freezing time: overnight
• 1 tin (380g) low-fat evaporated milk, well chilled
• 250g plain, fat-free yoghurt
• 125ml sugar substitute (such as Sugalite)
• 5ml vanilla essence
• 100g mixed berries, frozen
1 Beat the chilled evaporated milk with an electric beater until fluffy. Add the yoghurt while beating continuously.
2 Reduce the speed and continue beating on a slow setting while adding the sugar substitute a little at a time. Beat well after each addition. Once all the sugar substitute has been mixed in, add the vanilla essence.
3 Purée the frozen mixed berries in a food processor, then fold them into the milk mixture.
4 Pour the sorbet into a container that is suitable for freezing and place it in the freezer overnight.
