It’s quick, it’s easy and most of the ingredients are already in oyur store cupboard.
A recipe a day. Week 1: Tuesday
Preparation time: 20 minutes, plus marinating time
Cooking time: 10 minutes
• 30ml sunflower oil
• 30ml soy sauce, plus extra for noodles
• 30ml lime or lemon juice
• 50ml each fresh chopped mint and coriander, plus extra to serve
• 5-10ml fresh chopped chilli (or 2-5ml dried)
• 2 cloves garlic, crushed
• 500g chicken thigh fillets, halved
• one pack soba noodles
• 15ml sesame seeds, toasted
• steamed asparagus, to serve
1 Mix the sunflower oil, soy sauce, lime juice and 30ml of the mint and coriander together. Add the chilli and garlic. Pour over the chicken pieces and set aside to marinate for 20 minutes or longer.
2 Thread the chicken onto wooden kebab sticks. Grill on a griddle pan or over coals on a fire until they are cooked. Baste with any leftover marinade.
3 Cook the noodles in water or in chicken stock. Drain and stir in the remaining herbs, a little soy sauce and the sesame seeds. Serve with the chicken skewers with steamed asparagus or other green vegetables on the side.
