This cake is what a princess dreams about!
Makes: one castle
Preparation time: about 2 hours
Baking time: about 3 hours
Oven temperature: 180 ̊C
• 31⁄2 quantities of vanilla yoghurt cake batter
• 2,5ml green food colouring
• 5 ml peppermint essence
• 3 quantities buttericing 2 (see Basic Recipes PDF)
• white chocolate disks, to decorate
• 5 ice cream sugar cones
• 200g melted white chocolate
• silver balls, to decorate
1 You will need to bake three 24cm square cake layers (each made with one quantity of cake batter) and two 10cm round cake layers (made with half a quantity of cake batter).
2 Prepare a batch of cake batter according to the instructions in Basic Recipes PDF. Pour into a lined 24cm cake tin and bake for 50 minutes to one hour, until a skewer inserted comes out clean. Remove from the oven and cool.
3 Repeat with another 24cm cake. For the third 24cm cake, add the food colouring and peppermint essence (instead of the vanilla essence) to make a peppermint layer. TIP If you have three square tins, simply triple the mixture and bake all at once.
4 Prepare half a batch of vanilla batter and bake in two 10cm round baking tins for about 35 to 40 minutes, or until a skewer comes out clean.
5 Prepare the butter icing according to the instructions in Basic Recipes PDF. Sandwich the square layers together, putting the peppermint layer in the middle. Cover the top and sides of the cake with icing.
6 Cover the round cakes with icing and place them on top of each other and then in the centre of the square cake. Cover the sides of the cakes with white chocolate disks.
7 Dip the sugar cones in melted white chocolate and place one on each corner of the square cakes and one in the centre of the round cakes. Sprinkle the cake with silver balls.
