• 250g streaky bacon, chopped
• 2 large onions, chopped
• 4 carrots, washed and grated
• 3 sticks celery, sliced
• 500ml red lentils
• 2 litres prepared chicken stock
• 30ml chopped parsley
• 15ml lemon juice
• croutons and crusty bread, to serve
1 Fry the bacon in a saucepan until crisp. Remove with a slotted spoon and set aside. Leave the fat behind in the saucepan.
2 Sauté the chopped onions in the bacon fat until soft. Add the carrot and celery and sauté for a few minutes.
3 Add the red lentils and the stock. Simmer for 45 minutes. Stir in the bacon, parsley and lemon juice just before serving. Serve topped with croutons, with crusty bread on the side.
