Let the fragrant spicy scents of cinnamon evoke happy memories for you.
Serves: 6-8

Cooking time: 15 minutes
• 220ml (120g) cake flour
• 5ml baking powder
• 1 large egg
• 125ml milk
• 12,5ml melted butter
• 5 small Granny Smith apples
• 1/2 lemon
• sunflower oil, for frying
• 5ml ground cinnamon
• 1ml ground mixed spice
• 45ml sugar
• honey, to drizzle
Milk tart shooters
• 50ml vodka
• 125ml condensed milk
• 125ml evaporated milk
• ground cinnamon, for sprinkling
1 Sift the cake flour, baking powder and a pinch of salt together. Whisk the egg, milk and melted butter together, then whisk into the dry ingredients.
2 Use an apple corer to remove the cores from the apples and discard. Cut the apples into 5mm slices. Drizzle with lemon juice.
3 Heat a layer of oil in a frying pan over a medium to high heat. Once it is hot, dip a few pieces of apple into the batter. Fry until golden on both sides. Drain on absorbent paper. Mix the cinnamon, mixed spice and sugar together and sprinkle over the fritters. Or drizzle with honey, if you prefer.
4 Milk tart shooters Mix the vodka, condensed milk and evaporated milk together. Chill well. Pour into small glasses. Sprinkle with ground cinnamon. Serve with warm fritters.
