Strawberry sauce
Makes: 300ml
Preparation time: 20 minutes, plus cooling time
• 800g strawberries, washed and hulled
• 150ml sugar
• juice from half a lemon
• 10ml cornflour
1 Chop the strawberries roughly. Put into a saucepan with the sugar and lemon juice. Stir over medium heat until the sugar has melted. Increase the heat and simmer gently for 10 minutes. Remove from the heat and blend until smooth with a stick blender.
2 Mix the cornflour with a little water to form a paste. Mix a little strawberry mixture into the cornflour paste then stir it back into the saucepan. Return to the heat, stir well and simmer for five minutes or until it thickens. Remove from the heat and cool completely. Pour through a funnel into a plastic squeeze bottle.
Packaging
Cover and line a box with pretty paper. Cut a scalloped trim and glue to the edge. Add a ribbon. Fill the box with sundae glasses, wafers, toppings in containers, straws and spoons. Put hundreds and thousands into salt shakers. For the tag, cut the shape of an ice-cream sucker out of scrapbooking paper. Stick on the recipient’s name. Stick the paper onto a wooden ice-cream stick using double-sided tape.
