Preparation time: 45 minutes
Oven temperature: 180°C
• 330 ml (185g) cake flour
• 125 ml (100g) sugar
• 125 ml (125g) butter
• 1 x 397g can condensed milk
• 60 ml (60g) butter
• 30 ml golden syrup
• 125 ml (50g) pecan nuts, coarsely chopped
1 Combine the condensed milk, butter and syrup in a heavy-based saucepan. Whisk continuously for about 10 minutes over a low to medium heat, until the mixture starts to thicken and turns golden brown.
2 Sift the flour and add the sugar. Rub in the butter to form a dough. Press into a greased 20 x 20cm baking pan. Bake in a preheated oven for 15 to 18 minutes, then remove from the oven and leave in the pan to cool slightly.
3 Remove from the heat and spread the hot mixture over the base. Sprinkle with nuts, then press in lightly. Refrigerate or leave to set before cutting into slices or squares.
